Instructions

Step 1
On a sheet of wax paper, mix together the flour and pepper. Coat the chicken on both sides. Shake off the excess.
Step 2
In a large non-stick skillet, heat the oil over medium heat. Add the chicken and cook for 8 to 12 minutes, turning occasionally, until the chicken is no longer pink inside. Remove and keep warm.
Step 3
In the same skillet, add the spinach, basil, and garlic. Cover and cook for 2 minutes or until heated through. Stir well and spread the spinach mixture on a serving dish.
Step 4
Place the chicken on top of the spinach. Sprinkle with Parmesan. Serve immediately.
