This easy and tasty egg dish provides plenty of protein and a low carb nutrition package to start any day. Prep can be done in advance to shorten the time it takes to saute and put in the oven.

Instructions

Step 1
Pre-heat oven to 375°. Beat eggs (we use a small blender) and set aside. In an 8", oven safe skillet (we use an 8" iron skillet) - Cook sausage (or breakfast meat of your choice, bacon works great as well), saute vegetables to desired tenderness. When meat and vegetables are done keep them in the skillet and pour 1/3 of eggs into skillet, add half the cheese evenly spread. Add 1/3 cup eggs and spread balance of cheese evenly. Por remaining eggs over top. Leave on stove top until eggs just begin to stiffen around edges. Place entire skillet into pre heated oven for 20 minutes. Remove and let cool for a few minutes before cutting and serving.
