1 tablespoonbrown sugar

2 lbstew beef

1 tablespoonlemon juice
or vinegar

1onion
medium, chopped

2tomatoes
medium, chopped, divided

1shallot
small, minced

1green onion
chopped

4cloves garlic
sliced

1 tablespoonginger
minced

1 teaspoondried thyme

1 teaspoonallspice

1 teaspoonworcestershire sauce

1 tablespoonketchup

1 cupbeef broth

2 tablespoonscornstarch

¼ cupwater

2 tablespoonscilantro
minced
Instructions
Step 1
Cut beef into bite-sized pieces. Place in a bowl, add 1 teaspoon lemon juice or vinegar, then add enough water to submerge the meat. Soak for five minutes, then drain.
Step 2
Turn Instant Pot onto sautee mode on high. When hot, add vegetable oil to cover the bottom of the pot. Add brown sugar and stir constantly until the sugar is melted, bubbling, and a rich brown color.
Step 3
Add beef to the Instant Pot and saute until brown. Remove beef to a plate and set aside.
Step 4
Add onion, one tomato, shallot, and green onion to Instant Pot. Saute until the onion has just softened. Add garlic, ginger, thyme, and allspice, and cook for one minute more.
Step 5
Add beef back to the pot along with the remaining diced tomato, worcestershire sauce, ketchup, and 1 cup beef broth. Place the lid on your Instant Pot, set it to pressure cook on high for 15 minutes, and allow the pressure to come down naturally.
Step 6
Remove Instant Pot lid once the pressure has released. Stir together cornstarch and cold water. Add to the pot and bring the mixture up to a boil briefly. Turn heat back down to low, add cilantro, then serve.
