Instructions
Step 1
Prepare the zucchini base: Slice the zucchini into rounds approximately 2mm thick.
Step 2
Create protein layer: In a bowl, lightly whisk the egg whites and season with salt and pepper. Pour a thin layer of egg whites over the zucchini slices on the baking tray.
Step 3
Add cheese and bake: Place the zucchini on a baking tray lined with parchment paper. Sprinkle the reduced amount of mozzarella on top and drizzle lightly with olive oil. Bake for 15 minutes at 180°C (350°F).
Step 4
Prepare the filling: While baking, mix the cream cheese until smooth. Prepare your vegetables and chosen protein.
Step 5
Assemble: Let the zucchini cool slightly, then spread cream cheese on half the slices. Layer with arugula, tomato, avocado, and your chosen protein. Top with remaining zucchini slices.
