Instructions

Cheese whip

Step 1
Mix chive, cheese and yogurt until it is well combined and smooth

The fold

Step 2
Whisk with a fork the egg, milk, salt, pepper and chive
Step 3
Heat a frying pan with coconut oil or other approved oils
Step 4
Pour the egg mixture into the hot pan
Step 5
Form a round of about 150mm diameter
Step 6
Let it set and get to a nice colour, then flip over

Assembly

Step 7
Spread the cheese mixture to half of the egg disk

Top it with the thinly sliced avocado

Add the rocket on top

Sprinkle the dukkah
Step 11
Fold over the egg disk
Step 12
Add cracked pepper to your taste and enjoy
