Ingredients

4 tspOlive oil

⅔ cupchicken broth

2 lbsBoneless chicken breast

salt
to taste

pepper
to taste

2red bell peppers
cut into 1" pieces

1onion

1 bundleGreen onions
To garnish at the end

2 cupsPineapple chunks canned

2 tspminced garlic

2 tspginger
minced

1 ½ cupsPineapple juice
from the canned pineapple

½ cupsoy sauce

⅔ cuphoisin sauce

½ cupbrown sugar

4 tspcorn starch

1 cupWhite Rice
Dry rice doubles when cooked
Instructions
Step 1
Pour oil into the pan and warm to low-medium heat. Once warmed add in the 2/3 cup of Chicken broth.
Food Prep
Step 2
Chop the chicken into 1" pieces. Then place the chicken into the low-medium heat pan to begin cooking the chicken. Sprinkle the salt and pepper to your liking. Let the chicken cook slowly, stirring to evenly cook, while you continue to prep.
Step 3
Chop the bell pepper and onion into 1" pieces. Then set aside in a bowl. Open the can of pineapple chunks, and set aside. Chop up the green onions and set aside in a bowl.
Step 4
In a bowl, combine the remaining ingredients to prep the sauce.
Cooking
Step 5
Start making your white rice in a rice cooker or a pot. If using a pot on the stove, begin boiling your water. Two cup of water to 1 cup of rice. Pour in your rice when the water is boiling, turn the heat down to a medium heat. Keep your rice covered while cooking for 20 minutes.
Step 6
As the chicken starts to turn white, add the sauce mixture to the pan. Stirring enough to coat all the chicken.
Step 7
When the chicken is almost done cooking, add in the chopped bell pepper, and the pineapple chunks. When the peppers have softened, but are still firm, your dish is ready to enjoy.
