Instructions
Marinate the Chicken
Step 1
In a bowl, mix olive oil, garlic, lime juice, chipotle chili powder or adobo, paprika, cumin, salt, and pepper. Coat chicken evenly in the marinade. Cover and refrigerate for at least 30 minutes, or up to overnight for deeper flavor.
Grill the Chicken
Step 2
Preheat grill or grill pan over medium-high heat. Grill marinated chicken for 5–7 minutes per side, or until fully cooked (internal temp of 165°F). Rest for 5 minutes, then slice into strips or chunks.
Make the Chipotle Ranch Sauce
Step 3
In a small bowl, stir together ranch dressing, minced chipotle peppers, lime juice, garlic powder, and salt. Chill until ready to use.
Assemble the Burrito
Step 4
Warm flour tortillas on a skillet or in the microwave until soft. Layer rice (if using), grilled chicken, fresh toppings, cheese, and a generous drizzle of chipotle ranch. Fold sides inward and roll tightly into a burrito.
(Optional) Grill the Burrito
Step 5
For extra flavor and grill marks, place the rolled burrito seam-side down in a lightly oiled skillet or grill pan over medium heat. Cook for 2–3 minutes per side until golden and crisp.
