Coronation chicken sandwiches

Ingredients

1 loafgranary bread
thick sliced

75gbutter
softened for easy spreading

500gchicken breast
cooked, or 3 raw breasts to be cooked

1 Tbspcurry powder
mild is probably best

150gMayonnaise

75gCrème fraîche
full fat or use extra mayonnaise if Tony's not around

75gMango chutney

Instructions
Step 1
If using raw chicken, slice the breasts in half lengthwise, so that they cook faster
Step 2
Poach the chicken breasts in salted water for 20 minutes, until cooked
Step 3
Drain off the poaching stock and leave the chicken breasts to cool
Step 4
Meanwhile, in a mixing bowl, mix the coronation dressing
Step 5
Add the curry powder first, then mix with a whisk, with 1 tbsp of mayonnaise
Step 6
Mix well until the curry powder is thoroughly dispersed
Step 7
Add the mango chutney, creme fraiche and remainder of the mayonnaise
Step 8
Slice the chicken breast (about 5mm thick)
Step 9
Mix the chicken breast into the Coronation sauce
Step 10
Lay out 12 pieces of bread
Step 11
Butter each slice of bread (this is particularly important if making in advance, to avoid soggy sandwiches)
Step 12
Spoon 75-100g of the coronation chicken mix onto one side and spread across to all sides
Step 13
Complete the sandwich with a slice of buttered bread
Step 14
Press down and if serving later, transfer the sandwiches back to the bread bag for transport
Step 15
Close to service time (no more than 30 minutes), slice each sandwich into quarters
