Skillet-Cooked Chicken Thighs

1 lbboneless skinless chicken thighs

1 tablespoonolive oil

½ teaspoonsalt

½ teaspoonblack pepper

½ teaspoongarlic powder

½ teaspoononion powder

¼ teaspoonpaprika

For the Burritos

1avocado
ripe, diced

1 cupblack beans
drained and rinsed

1 cupshredded lettuce

1 cupshredded cheddar cheese
or monterey jack

4flour tortillas
large

1 cupbell peppers
sautéed, optional
For the Ranch Sauce

½ cupranch dressing

2 tablespoonsfresh cilantro
chopped

1 tablespoonlime juice

½ teaspoongarlic powder

salt
to taste

black pepper
to taste

Instructions
Cook the chicken
Step 1
Pat chicken thighs dry with paper towels for better browning. Trim off excess fat if needed.
Step 2
In a small bowl, mix all spices. Rub mixture evenly over both sides of the thighs.

Heat olive oil in a large skillet over medium-high heat. Add chicken thighs in a single layer (cook in batches if needed). Cook for 5–6 minutes per side, or until nicely browned and internal temperature reaches 165°F (74°C).
Step 4
Transfer chicken to a cutting board and let rest for 5 minutes. Slice into strips or shred with two forks for burrito filling.
Prepare the Ranch Sauce

In a mixing bowl, combine the ranch dressing, chopped cilantro, lime juice, garlic powder, salt, and black pepper.
Stir until well mixed. Set aside.
Warm the Tortillas

Heat the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until warm and pliable.
Keep them covered to retain warmth.
Assemble the Burritos

Lay a warm tortilla flat on a clean surface. In the center, layer shredded chicken, diced avocado, black beans, shredded lettuce, shredded cheese, and sautéed bell peppers if using. Drizzle with the prepared ranch sauce.
Roll the Burritos

Fold in the sides of the tortilla, then roll it up tightly from the bottom to enclose the filling. Repeat with the remaining tortillas and ingredients.
Serve

Place the burritos on serving plates. Garnish with chopped cilantro if desired, and serve with lime wedges on the side.
