Step 1
Heat oil in a medium pan, add chicken, sprinkle with seasoning. sautee on medium until no longer pink. Remove chicken from pan and set aside, wipe remaning oil out with a napkin if needed.
Step 2
lay one tortilla at a time in the pan. brown just slightly then flip over.
Step 3
On one half of the tortilla sprinkle a quarter of the cheese, half of the onion, mushrooms, peppers, and chicken. Top with another quarter of the cheese. Fold undressed side of tortilla over the toppings. Cook until cheese is melty. Remove from pan and repeat with remaining tortilla.
Step 4
Use a pizza cutter or large knife to cut each into 3 triangles. Top with sour cream, pico, salsa, avocado or your favorite toppings. Enjoy warm.
