Crispy Jalapeño Popper Taquitos INGREDIENTS * 12 TortillaLand raw medium tortillas * 1 pound ground chicken or beef * 1/2 small onion, chopped * 2-4 jalapenos, chopped deseeded * 3minced garlic * 1 1/2 teaspoons chili powder * 1 teaspoon cumin * 1/2 teaspoon smoked paprika * 1/2 teaspoon salt * 1/4 teaspoon oregano * 8 oz. cream cheese, softened * 1/2 cup salsa * 2 cups freshly grated Pepper Jack cheese, divided Chipotle crema : mix together 1. 1/4 cup sour cream 2. 2 tablespoons chipotle in adobo sauce (add more if you like it spicy) 1. In a pan add ground meat , onion, jalapeño. Cook until meat is cooked about 5 minutes. Add garlic and cook 30 seconds. 2. Drain off fat if any. Add seasonings , salsa and cream cheese. Cook for 1-2 minutes. Add one cup of shredded pepper Jack cheese. Remove from heat. 3. Assemble by adding a heaping 1/4 cup of meat mix on to the bottom 1/3 tortilla and spread. Add one tablespoon of pepper Jack cheese. 4. I add a bit of the mix to the top of the tortilla so when rolling tightly it will seal the tortilla. 5. In a skillet add one teaspoon oil. Cook the tortillas, rotating on all sides until golden brown. 6. Make the chipotle crema.

Instructions

Step 1
1. In a pan add ground meat , onion, jalapeño. Cook until meat is cooked about 5 minutes. Add garlic and cook 30 seconds.

2. Drain off fat if any. Add seasonings , salsa and cream cheese. Cook for 1-2 minutes. Add one cup of shredded pepper Jack cheese. Remove from heat.
