Ingredients

Roast Chicken
Sesame soy dressing
Salad
Garnish
Instructions
Step 1
Spatchcock chicken, season with salt and pepper and roast in oven at 180oC for approx 1 hour and 10 minutes
Step 2
Make up glaze (leave sesame seeds) and brush over chicken after 30 minutes and again after another 30 minutes. Sprinkle sesame seeds onto the chicken at this point and roast for final 10 minutes.
Step 3
Combine salad dressing mixture in a jar and shake well to combine
Step 4
Chop salad ingredients and assemble in a bowl. Add as much salad dressing as required
Step 5
Add in desired chicken (breast/leg) and pour over some of the chicken juices. Garnish with coriander and fresh chilli
