Turkish Breakfast Eggs

¼ cupgreek yogurt

¼ cupcottage cheese

1 Tbspherbs
dill, chives, parsley

0.5fresh lemon juice

garlic

2eggs

salt

Chilli Butter
Sauté mushrooms
Instructions
Eggs
Step 1
Bring a pot of water to a boil.
Step 2
Gently add the eggs and boil for 6 minutes.
Step 3
Remove the eggs and place them in a bowl of ice water to stop them from cooking.
Step 4
Once cool, peel and cut them in half.
Yogurt Base
Step 5
In a bowl, mix together plain yogurt and cottage cheese
Step 6
Stir (or blend) until smooth.
Step 7
Add in chopped herbs, lemon juice, garlic and a pinch of salt and pepper

Mix well and set aside
Sauté mushrooms
Step 9
Heat the olive oil over medium-high heat
Step 10
Add mushrooms and cook until they release their moisture and start to brown

Once finished take off heat and set aside
Chilli butter sauce
Step 12
In a small pan, melt butter
Step 13
Once the butter has melted add paprika, chilli flakes and bagel seasoning

Remove from heat and stir in honey
Step 15
Keep stirring until all mixed in
Assembly
Step 16
Spread the yoghurt mixture on a plate

Top with sautéed mushrooms
Step 18
Add the eggs on top

Drizzle with chilli butter
Step 20
Sprinkle extra salt and pepper to taste
