Step 1
Quarter the potatoes. Add oil and half the enchilada spice, salt and pepper to taste. Then bake at 450° F for 25-30 min. (Sub enchilada spice for taco or tex mex spices)
Step 2
Thinly slice onions.
Halve then slice the zucchinis. Cut the peppers in quarter sizes. Mince the garlic.
Step 3
Fry up the pepper, zucchini, onion, and half the garlic in oil until tender-crisp. About 10 minutes. Season with salt and pepper to tastes.
Step 4
Fry the beef over medium-high. Break up the beef and once fully cooked, add the rest of the enchilada spice and some cold water. Mix well. Add more spice then you think for full flavor. Add salt and pepper to taste.
Step 5
Lime Aioli
Chop the cilantro and zest the lime. Add the mayo, half the cilantro, lime zest, and lime juice to a bowl. Mix well. Add salt and pepper to taste. Adjust the ingredients until you get the taste you want.
