Salt Cod and Tomato Stew

Doesn't look pretty but one of my favourite stews. So savoury and delicious. Rich, umami salt cod and soft, stewed tomatoes in lashings of olive oil and garlic. Scoop it up with lots of good bread.

Instructions

Step 1
Slice the onion thinly and fry in the olive oil gentle for 30 minutes until very soft.
Step 2
Chop the tomatoes and add them to the pan. Cook gentle for 20 minutes.
Step 3
Add the wine and reduce by half
Step 4
Chop the salt cod into bite-sized pieces and add to the pan with the stock. Cover and simmer until the cod is cooked (around 20 minutes).
Step 5
Finely chop the parsley and stir through the stew. Cook for a couple more minutes, check the seasoning and serve with an extra drizzle of extra virgin olive oil, crusty bread and dry white wine.
