Instructions
Soak
Step 1
Soak Rice & Lentils for 15-20 Minutes



Khichdi - Aromatics
Step 2
Heat Oil in pot over medium heat, until shimmers.


Step 3
Add Onions (Chopped) and sweat until translucent.

Step 4
Turn heat to high; Add Carrots & sauté until slightly caramelised & browned.

Step 5
Add Bell Peppers & briefly sauté.

Khichdi - Spice Fry
Step 6
Add Tomato Paste, Curry Powder, & Bouillon Cube to pot; fry briefly.


Khichdi - Broth
Step 7
Add Fresh Tomato, Rice, Lentils, & Water to pot; bring to boil.




Step 8
Cover, reduce heat to low, and cook until cooked(about 25-30 minutes); add hot water to broth if needed.
Tadka Preparation
Step 9
Heat Oil in pan over medium heat.

Step 10
Add cumin seeds, and fry until they begin to sputter.

Step 11
Add Chopped Onion & Chiles; Sauté until translucent and slightly golden (about 5 minutes).

Step 12
Grate Garlic & Ginger & mix into paste.


Step 13
Stir in Paste; Sauté until fragrant.
Step 14
Remove from heat & stir in Red Chili Powder.

Assembly
Step 15
Stir Tadka into Khichdi; Garnish as desired.
