Lebanese Style Lentil Soup with Vermicelli Pasta and Rice

This soup is filled with so much flavour and absolutely delicious! We have been eating it every single day since Ramadan started & we’re still not sick of it!
It’s so easy to make & absolutely mouth watering! Even my kids are obsessed with it 😍

Step 1
Wash the lentils, then cover with 2 cups of water and set aside for 30 minutes.

Finely chop the Onion and brown in Olive Oil over high heat for 4 minutes.

Add the Vermicelli Pasta and toast until golden.

Add the Lentils with their water.

Add the Rice (washed & strained).

Add the seasonings and chicken stock powder.

Cover with 2L of Boiling Water.

Bring to a light simmer, lower the heat, cover and cook for 45 minutes or until the lentils are tender.
