For the Sandwiches

1yellow squash
cut into rounds

1zucchini
cut into rounds

2 Tbspcoconut aminos

½ Tbspapple cider vinegar

¼ tsphoisin

Garlic powder

salt

pepper
to taste

2onions
cut into rounds

1 cupvegetable broth
For the Peanut Sauce
Instructions
Step 1
Marinade the vegetables (I did it for about 5 hours but 30 minutes is more than enough)
Step 2
Put the oven to 400°F, Broil for 7 mins, brush on the leftover marinade then cook for another 3 minutes.
Step 3
Throw the broth and onions into a pan and cook 15-20 minutes (till the onions are soft and most of the liquids gone)
Step 4
Mix together the Peanut Sauce then assemble.
