Instructions

Step 1
Place everything except oil in a mixing bowl and mash well with a fork, making sure the curry paste is mixed through. Take a small teaspoon of the mixture and fry for a couple of minutes to check seasoning level. Taking heaped dessert spoons, shape into patties. Heat 1 T of oil in large non-stick skillet over medium heat. Add the patties and fry for 2-3 minutes on each side, until golden. Place on paper towel. Serve immediately with squeeze of lime. Perfect dipped in sweet chilli sauce and side of cucumber relish.
