Instructions
Step 1
Whisk together and red curry paste, lime juice and egg

Stir in ½ cup whole wheat panko, scallions come up for cilantro and kosher salt

Add shrimp and stir well to combine

Divide mixture into four equal portions and shape each into a ball
Step 5
Roll each ball in the remaining ½ cup panko
Step 6
Add canola oil to a large nonstick skillet over medium. Flatten each to a 1 inch thick patty
Step 7
Cook until brown and cooked through, 3-4 minutes per side
Step 8
Serve over bibb lettuce leaves
