Instructions

Tonight

Step 1
• In a large bowl (or stand mixer), whisk together: 450g flour 9g salt 25g sugar 7g instant yeast
Step 2
• Add: 240g warm water 60g milk 28g softened butter Mix to form a sticky dough.
Step 3
• Knead 8–10 min by hand or 5–6 min in mixer until smooth and slightly tacky.
Step 4
• Initial Rise (Room Temp) Cover the dough and let it rise for 1 hour at room temp until puffy (not necessarily doubled).
Step 5
• Cold-Proof Overnight Punch down gently, shape into a ball, place in lightly oiled bowl, cover tightly.
Step 6
• Refrigerate overnight (8–16 hours).

Tomorrow

Step 7
Let dough sit out for 30–45 min to take off the chill.
Step 8
• Divide into 6–8 equal pieces (about 95–120g each).
Step 9
• Shape into smooth logs ~6–7 inches long.
Step 10
• Second Rise: Place rolls on parchment-lined tray.
Step 11
• Cover loosely and let rise for 1.5–2 hours until nice and puffy.
Step 12
• Bake Preheat oven to 375°F (190°C).
Step 13
• Optional: Brush with egg wash (1 egg + splash of water) for shiny tops.
Step 14
• Bake 18–22 minutes until golden brown.
Step 15
• Cool on a wire rack.
