Instructions
Step 1
Peel the sweet potato, chop into pieces, place in filtered water, bring to the boil and simmer until potato is soft. Drain and add 1 tablespoon and mash.
Step 2
In a fry pan, melt 1 tbsp butter, add 1 tsp rapadura sugar and mix; add onion and capsicums and cook until soft.
Step 3
Heat a skillet on medium-high heat. Place the salmon on the skillet (or, alternatively, cook the salmon on a hot barbecue), season with salt, and cook for 5 minutes then turn and cook on the other side for a further 2 minutes.
Step 4
Plate the sweet potato mash, lightly spread out so you can nestle the salmon on top. Top with onion and capsicum mix. Serve with salad.
