Carrot Cake Bites

I’ve always preferred carrot cake to any other type of cake. In fact one of the layers of our wedding cake was carrot, if you can believe it! So rest assured these bites are fellow-cake-lover approved and full of all the flavor from the traditional cake, minus some of the unwanted sugar.

Instructions
Step 1
In a blender jar, combine the oats and carrots, and process until finely ground. Transfer to a bowl.
Step 2
Add the dates and walnuts to the blender and process until coarsely chopped. Return the oat-carrot mix to the blender and add the coconut flour, hemp seeds, maple syrup, cinnamon and nutmeg. Process until well mixed.
Step 3
Using your hands, shape the dough into balls about the size of a tablespoon.
Step 4
Store in the fridge in an airtight container for up to 1 week.
Step 5
Option tip: these cake bites are great on their own, or you can top them for even more fun. Roll the finished balls in coconut flakes or unsweetened coconut powder for a unique twist, or melt some white or dark chocolate and drizzle it on the balls before refrigerating.
