Instructions
Step 1
Slice orange into eighths and chop slices into bite size pieces, peel and all.
Step 2
Add orange pieces, eggs, sugar, and vegetable oil to food processor and blend until smooth.
Step 3
Add flour and stir until well incorporated.
Step 4
Pour batter into parchment lined loaf pan. Bake at 350°F for 50 mins, or until toothpick inserted in the centre comes out clean.
Step 5
While loaf cools, bring orange juice and 1 tablespoon sugar to boil over med-high heat. Pour slowly over slightly cooled loaf and allow the loaf to absorb the syrup.
Step 6
Remove loaf from loaf tin, remove parchment and allow to cool completely on a rack over a baking sheet to catch any syrup drips.
Step 7
Once completely cool drizzle with melted white chocolate or a sugar glaze. Sprinkle with orange zest. Slice and serve. Enjoy!
