For the Marinade
1.5kgchicken mid wings

3 tablespoonstomato paste

1 tablespoonghee
or any oil you like

1 tablespoonhoney

2 teaspoonsgarlic powder
or flakes

2 teaspoonsonion powder
or flakes

2 teaspoonssmoked paprika

½ teaspooncayenne pepper
adjust to taste

1 teaspoonground cumin

1 teaspoonsalt

½ teaspoonblack pepper

1 tablespoonapple cider vinegar
or lemon juice
Instructions
Make the Marinade
Step 1
In a large bowl, mix tomato paste, olive oil, brown sugar or honey, garlic powder, onion powder, smoked paprika, cayenne pepper, cumin, salt, black pepper, and vinegar or lemon juice. Stir into a smooth, thick paste.
Marinate the Wings
Step 2
Add the wings to the bowl and toss until completely coated. Cover and let sit for 30 minutes to overnight in the fridge for best flavour. Or cook immediately if you’re short on time.
Cook the Wings
Step 3
Option A: Oven-Baked Preheat oven to 200 °C (fan-forced). Line a tray with baking paper or foil. Spread wings in a single layer. Bake 25–35 minutes, turning once halfway. For extra crisp or colour, grill/broil the last 2–3 minutes. Option B: Grill/BBQ Preheat BBQ or grill to medium-high. Cook wings for 15–25 minutes, turning occasionally, until cooked through and nicely charred.
