Instructions
Step 1
Marinade pork in hoisin sauce approx 30 minutes prior to beginning meal prep. Heat oven to 400°. Bake 20-25 minutes.
Step 2
Prepare vegetable toppings. Bring 1 distilled vinegar to a boil. Add i cup of sugar. Let boil about 3 minutes. Pour into bowl. Add cucumbers, carrots and onions and let marinate. Top with salt and pepper to taste.
Step 3
Prepare quinoa to label instructions. Add half of finely chopped cilantro to quinoa with a drizzle of evoo.
Step 4
Once pork is done, let rest and top with any remaining hoisin. Cut into half inch rounds.
