Ingredients
8 servings

1 poundchicken breast
cubed, cooked

14.5 ozpenne pasta
cooked

5 ozturkey pepperoni
sliced into quarters

10 ozgrape tomatoes
halved

2seedless cucumbers
chopped

1 cuppickled red onion
sliced

1red bell pepper
or gree, diced

8 ozmushrooms
sliced

⅓ cupkalamata olives
sliced

16 ozreduced fat shredded mozzarella cheese

1 cupItalian dressing
Instructions
Step 1
Cook chicken by either sautéing, roasting, or grilling, depending on your level of chill. Ensure cooked chicken is in bite sized pieces.
Step 2
Cook pasta according to package instructions, then drain and rinse with cold water.
Step 3
Slice/dice/chop all the other ingredients.
Step 4
Add chicken, pasta, pepperoni, cheese, and vegetables to a big bowl. Add dressing and toss to combine. Toss well before serving.
