Italian Pasta Salad
This quick and easy pasta salad is refreshing and so simple! With just a couple of ingredients including fresh veggies, roasted chicken, and a pre-made light Italian dressing (I used a packet version from Good Seasons), this pasta dish is the perfect easy lunch or meal prep idea!

I used chickpea pasta for extra protein

½ cupPersian cucumbers
diced

½ cupcherry tomatoes
cut in half

½ cupmini sweet bell peppers
diced

¼ cupred onion

chicken
roasted

2 Tbspbasil

¼ cupcrumbled feta

dried spices
Italian Dressing
Instructions
Step 1
Cook pasta according to package instructions. Drain and set aside to cool.

Step 2
Prepare dressing by following packet instructions. Alternatively, you can make your own homemade italian dressing as well.
Step 3
Season pasta with dried spices such as oregano, italian seasoning, parsley flakes, etc.
Step 4
Add pasta salad ingredients and pour italian dressing over mixture, stirring well to combine
Step 5
Store in fridge for ~5 days
