Chicken

1 lbboneless skinless chicken breasts

1 Tbspolive oil

1 Tbsplemon juice
optional

½ tspsalt

½ tsppepper

1 tspitalian seasoning blend

1 tspgarlic powder

½ tspsmoked paprika
Pasta Salad

8 ozpasta
cooked according to box, I used protein pasta

2persian cucumbers
sliced

½ cupcherry tomatoes
halved

½ cupbasil
packed, chopped

½ cupspinach

6 ozmozzarella pearls
Balsamic Vinaigrette
Instructions
Step 1
cube chicken breasts and coat thoroughly in oil and lemon juice, seasoning with desired spices. place the cubed chicken pieces in a large pan over the stove and and pan sear until cooked through (alternatively you can bake it in the oven at 400* for about 20-25 mins).
Step 2
while the chicken is cooking, cook pasta according to package instructions, or until al dente. drain and set aside to cool.
Step 3
in a small bowl, mix together balsamic vinaigrette ingredients.
Step 4
add all pasta salad ingredients + cooked chicken to a large bowl. pour dressing over. season with salt and pepper and additional dried or fresh herbs. eat straight away or set in the fridge for a bit to cool. enjoy!!
