Step 1

Bake the 1 lb. bacon at 400 degrees until crisp (15-20 minutes), flipping halfway through. Like skinning a cat, which is not called for in this recipe, there many ways to cook bacon. Do as you please when makin' bacon. If done correctly, you will cooking MS's like a pound of bacon. Drain on paper towels to cool. Note: You can also arrange the bacon on a rack in the sheet pan. Chop the bacon into chunky pieces.
Step 2

Put the eggs, cheese, salt and black pepper in a large or extra-large bowl. Whisk 1/2 cup of hot pasta cooking water into the beaten egg and cheese mixture. This tempers the eggs so they’re less likely to curdle.
Step 3

Dump the hot cooked pasta into the bowl and toss immediately and quickly with tongs until thoroughly mixed. Sprinkle the chopped bacon and parsley over and toss again.
Tips
Step 4
Whisk the hot pasta water into the eggs just before adding the pasta.
Step 5
Mix the sauce and pasta in a large shallow bowl (as opposed to a deep mixing bowl) so that the heat doesn’t concentrate at the bottom of the bowl.
Step 6
Toss the egg mixture and pasta quickly and repeatedly until all the strands are coated.
