A rustic German dish made with Zander (pike-perch), a lean white fish popular in Central Europe. Since Zander is hard to find in North Texas, we’ll use a local substitute like walleye, snapper, or cod, and bake it with fresh herbs, lemon, and butter/olive oil for a light, low-sodium take.

For the Fish

2white fish fillets
Zander substitute, snapper, walleye, cod, or tilapia, Available at Whole Foods, H-E-B, Central Market, Sprouts

black pepper
Freshly ground

¼ tspsalt substitute
Optional, Morton Lite Salt or Nu-Salt
For the Herb Topping
Instructions
Preheat the Oven
Step 1
Preheat oven to 400°F (200°C).

Step 2
Line a baking sheet with parchment paper or lightly greased foil.
Prepare the Fish
Step 3
Pat fillets dry and place them skin-side down on the baking sheet.

Step 4
Season with pepper and a light sprinkle of salt substitute (optional).


Step 5
In a small bowl, mix together the olive oil (or melted butter), garlic (if using), herbs, lemon zest, and lemon juice.

Spoon or brush the herb mixture evenly over each fillet.
Bake

Bake for 12–15 minutes, depending on thickness, until the fish flakes easily with a fork and is opaque throughout.

Serve with: • Steamed green beans or sautéed zucchini (with olive oil + lemon) • Boiled baby potatoes with chopped parsley and a drizzle of olive oil • A light cucumber salad (low-sodium Gurkensalat)
