Instructions

Step 1
Activate yeast (if using active dry yeast): Mix warm water, warm milk, sugar, and yeast. Let sit for 5–10 min until foamy. (Skip this if using instant yeast.)

Mix dough: In a large bowl or mixer, combine flour and salt. Add the yeast mixture, 1 egg, and soft butter. Mix to combine.
Step 3
Knead: Knead until dough is soft, elastic, and slightly tacky (8–10 min by hand or 6 min in a stand mixer). Don’t rush this — kneading builds strength and fluff.
Step 4
First rise: Cover and let rise in a warm place until doubled, ~1 to 1½ hours.
Step 5
Shape buns: Divide dough into 8 equal pieces. Shape into balls and gently flatten on a parchment-lined baking sheet.
Step 6
Second rise: Cover loosely and let rise another 30–45 minutes, until puffy.
Step 7
Preheat oven to 375°F (190°C). Beat the remaining egg with 1 tbsp milk. Brush over the tops for a golden, shiny crust.
Step 8
Bake: 15–18 minutes until deep golden brown. Let cool on a rack.
