Garden chicken Supreme
The Herbes de Provence add such a great flavour, you will find it hard to believe this is suitable for Phase 1. Herbes de Provence is an aromatic mixture of dried herbs used in Southern France. If you don’t have this mixture in the cupboard, you can mix your own using a selection of the following dried herbs: basil; bay leaves; chervil; cloves; fennel seed; marjoram; rosemary; sage; tarragon and thyme.

Ingredients
4 servings

4chicken breasts
boneless, Skin ON

1 tablespoonherbes de provence

6 tablespoonsolive oil

2onions
chopped

2cloves garlic
chopped

2courgettes
peeled & chopped

1red pepper
deseeded & cut into strips

1yellow pepper
deseeded & cut into strips

1green pepper
deseeded & cut into strips

400gtin chopped tomatoes

2 tablespoonsfresh parsley
chopped

basil leaves
to garnish

salt

ground pepper
to taste
Instructions
Step 1
1. Rub the chicken breasts with the herbs.
Step 2
2. Heat 2 tablespoons of oil in a large pan, add the chicken (skin down) and fry for 8 minutes, then turn over and fry for another 5 minutes. Remove from the pan and keep warm.
Step 3
3. Add the remaining oil, onions, garlic, courgettes and peppers to the pan. Cook stirring gently for 10 minutes.
Step 4
4. Add the tomatoes (with the juice) and season.
Step 5
5. Cover and simmer for 10 minutes.
Step 6
6. Stir in the parsley and put the chicken on the top, cover and simmer for 10 minutes. Serve with basil garnish.
