thick-cut, chopped

1yellow onion
finely chopped

2ribs celery
finely chopped

1red bell pepper
seeded and finely choppped

2 lbYukon gold potatoes
unpeeled cut into 1-inch pieces

4 clow-sodium vegetable broth
or chicken

½ cdry white wine

kosher salt

2 lbwhite fish fillets
thick, such as cod or halibut, cut into 1 1/4 inch chunks

0.5 lbhot-smoked salmon
skinned and broken into bite-size chunks

1 ½ cfrozen white corn

¾ cheavy cream

1 bunchfresh chives

Quick Cook
Step 1
Put the slow cooker insert on the stove top over medium heat, then add the bacon and fry until the bacon is crisp about five minutes using a slotted spoon transferred to a small bowl pour off all but 1 tablespoon of the fat from the inert and return the insert to medium high heat add the onion, celery, and bell pepper, and Cook stirring often and scraping up any brown bits from the insert bottom with a wooden spoon Until softened.
