No Fail Crunchy Nut Granola (Banana nut version)

A lactation friendly, super food packed granola that browns beautifully and hunks together. Great on it's own, topped on parfaits, and versatile enough you can make it your own by subbing or adding ingredients of your choice.

Instructions

Step 1
Preheat your oven to 300 degrees.
Step 2
Combine oats, almonds, nuts, ground flax seeds, hemp hearts and coconut flakes in a large bowl.
Step 3
In a separate microwave safe bowl, combine coconut oil (you can sub olive oil if you don't have coconut), honey, and maple. Microwave for 15 seconds at a time until the coconut oil has melted. (This can also be done in a small pot on the stove.)
Step 4
Add the banana, salt, vanilla, and cinnamon to the oil mixture and stir to combine.
Step 5
Combine the oat and oil mixtures and gently stir.
Step 6
Spread on a parchment lined baking sheet in an even layer.
Step 7
Bake for 10 minutes and then give it a stir.
Step 8
Continue to bake in 10 minute intervals stirring in between until it is a light golden tan color. It will take approximately 2-4 intervals.
Step 9
When it's golden brown take it out and pack it together so it is tight and a bit taller. Drying it like this will make for a chunky granola. It's very important to let it fully dry like this on the pan before breaking it up to get the hunks. It's not necessary to dry it like this, I just like to have different size chunks of granola.
Step 10
Store in an airtight container.
