I love treating pita bread as a canvas—cooking is an art, after all. With fresh vegetables, you get a vibrant rainbow of beautiful colors that taste delicious. The dressing is so refreshing and light that to thicken it, I place the hummus directly into the dressing. You can keep them separate and spread the hummus on the pita before adding the salad.
