Sundried Tomato Egg Bake

My friend Katrina @myorgasmiclife sent this recipe she curated into my inbox and it serrrrved. Put my own spin on things and voila! It turned out so delicious and packed with protein, a flavour bomb, and full of healthy fats.

Instructions

Step 1
Heat Oven to 400
Step 2
Mix the tomatoes, egg, cheeses in a bowl. Add some pepper but be careful with the salt - the cheeses and bacon are pretty salty so just a pinch was required for me.
Step 3
Pan fry the bacon (smoked bacon is the most lovely I find) and once cooked remove from pan and chop. Add to egg mix.
Step 4
In the same pan with the bacon fat, add the onion and garlic. Cook gently till its golden, then add to the egg mix.
Step 5
Add butter to pan next, and the broccoli. Cook until tender then chop up in small pieces and add to the egg mix.
Step 6
Since my toddler doesn't like big chuncks of things (he gets suspicious) I blended in a blender half the mixture so it was a more "uniform" texture. Not necessary though if for just adults.
Step 7
Crumple up some parchment, line your baking tray, pour in the mix. I chopped up some fresh basil from my plant and poked it into the top of the mixture once it was in the pan. Cook in oven until puffed up and golden. Around 30-45 minutes.
