Ingredients
6 servings

3cucumbers
small, Persian or mini cucumbers, sliced into rounds or spears

1 cupwhite vinegar
or apple cider vinegar

1 cupwater

1 tablespoonkosher salt
or pickling salt

1 tablespoonsugar
optional, adjust to taste

2 clovesgarlic
smashed

1 teaspoonmustard seeds

½ teaspoonblack peppercorns

3 sprigsfresh dill
or 1/2 teaspoon dried dill seed, optional

chilli flakes
if you want some heat
Instructions
Step 1
Pack the cucumber slices into a clean glass jar. Tuck in the garlic, dill, and spices as you go.







Step 2
In a small saucepan, combine the vinegar, water, salt, and sugar. Heat just until the salt and sugar dissolve. Do not boil.





Step 3
Carefully pour the warm brine over the cucumbers until fully covered.
Step 4
Let the jar cool to room temperature.
Step 5
Seal with a lid and place in the refrigerator.
Step 6
The pickles will start to develop flavour after 12 hours but are best after 24 to 48 hours.
