Ingredients

2.5 lbsboneless skinless chicken thighs
or breasts
1 lbbaby red potatoes
halved
1 lbbaby carrots
4cloves garlic
minced
½ cuplow-sodium soy sauce
½ cuphoney
¼ cupketchup
optional, for extra depth, you can omit or reduce if desired
2 tablespoonsolive oil
or sesame oil
1 tablespoonapple cider vinegar
or rice vinegar
½ teaspoonblack pepper
½ teaspoonred pepper flakes
optional, for heat
2 teaspoonscornstarch
optional, to thicken sauce
2 tablespoonswater
sesame seeds

Instructions
Step 1
Layer Vegetables: Place halved potatoes and carrots in the bottom of the slow cooker.
Step 2
Add Chicken: Lay the chicken thighs or breasts on top of the veggies.
Step 3
Make Sauce: In a bowl, whisk together garlic, soy sauce, honey, ketchup (if using), oil, vinegar, black pepper, and red pepper flakes.
Step 4
Pour Sauce: Pour the sauce over the chicken and vegetables.
Step 5
Cook:Low for 6–7 hours or High for 3–4 hours (Chicken should be tender and cooked through; vegetables should be soft.)
Step 6
Optional – Thicken Sauce: Remove about ½ cup of liquid from the slow cooker, whisk it with the cornstarch and water, then stir it back in. Cook for an additional 15–20 minutes to thicken.
Step 7
Serve: Plate the chicken and vegetables, drizzle with sauce, and garnish with sesame seeds or green onions if desired.
