Deliciously spiced stem ginger biscuits with a hint of golden syrup. Perfect for tea time, these biscuits are both crunchy and soft with a warming ginger flavor.

Step 1
Preheat the oven to 180°C.
Step 2
Beat the butter and sugar together until light and fluffy.
Step 3
Add the egg and golden syrup and combine well.
Step 4
Add the spices, flour, and bicarbonate of soda and mix to form a dough.
Step 5
Roll the dough into a long cylinder, wrap in cling film, and place in the freezer for 30 minutes or in the fridge for an hour.
Step 6
Using a sharp knife, slice the dough cylinder into discs.
Step 7
Top each disc with a small piece of stem ginger and place on a lightly greased baking tray.
Step 8
Bake for 10 to 12 minutes until dark brown and cooked through.
Step 9
Allow to cool on a wire rack for five minutes before serving.
