Instructions
🍋 TOFU
Step 1
Break tofu into 3/4-inch by 3/4-inch chunks and place them directly in a single layer in both air fryers.
Step 2
In this order, click the "1", "Air Fry", then "Match Cook" buttons to air-fry both baskets of tofu at 375°F for 6 minutes.
Step 3
Shake both baskets of tofu, getting the tofu into a relatively single layer of it in both air-frying baskets.
Step 4
In this order, click the "1", "Air Fry", then "Match Cook" buttons to air-fry both baskets of tofu at 375°F BUT for only 2 minutes this time.
Step 5
After you've finished the first round of tofu in both baskets, pour them into a bowl.
Step 6
Cover the bowl with one of the blue, silicone plate toppers/pot-and-pan-holders to keep them hot while the remaining tofu air-fries.
Step 7
Repeat Steps 1-5 until you have air-fried all of the tofu.

Step 8
Right after you start the air-fryer for 6-minutes with the first batch of tofu, whisk together all of the Wallace sauce ingredients in a medium/big-sized bowl in the order that they are listed under the Ingredients list. This helps to keep the tbsp measuring spoon wiped clean'ish before adding in the next ingredient.
Step 9
Once you get to air-frying the second batch of tofu for 2 minutes at 375°F, put the large, deep pan that hangs on the right side of the black baskets on the kitchen wall on the front, right burner.
Step 10
Set the front, right burner to Hot and let it sit for 2 minutes with the lid on.
Step 11
Reduce to Medium, then pour in the Wallace sauce.
Step 12
Put the lid on the pan and allow the sauce to come to a simmer. If it doesn't come to a simmer on Medium, increase the temperature to Medium-High or just below that. Tinker with it. Don't let it scorch, though.
Step 13
Pour all of the air-fried tofu into the pan. It should make a oil-frying sound.
Step 14
Fold the tofu around the pan until all of it is fully covered by the Wallace sauce and cover it with the lid. Reduce the temperature if it's still spattering/sounding like oil frying. Keep it ONLY to a light simmer in the sauce, nothing less, nothing more.
Step 15
Remove the lid and fold the tofu around the pan again every 1-2 minutes, replacing the lid again once you're done.
Step 16
Continue cooking the tofu like this for about 8 minutes.
Step 17
Remove the lid and fold around the tofu until most of the water has evaporated and the sauce has mostly been absorbed by the tofu. Definitely still keep it saucey, though. That makes for great leftovers! 😃
Step 18
Eat immediately or put it in an air-tight container in the fridge. Should last about 4-5 days in the fridge.
