Instructions

Step 1
Soften the dates: check your dates- they should be soft and sticky. If feel dry or firm, soak them in warm water for 10 minutes, then drain and pat dry completely.
Step 2
Pulse nuts: add almonds and cashews to a food processor. Pulse 8 or 10 times until you have a rough chunky crumble
Step 3
Add the fruit and dates: add dates, raisins, dried tart cherries, goji berries to the food processor and process for 20-30 seconds. Stopping to scrape down the sides as needed . The mixture is ready when it clumps together and holds a ball shape.
Step 4
Fold in coconut, chia, and half of the dried raspberries, pulse 5 or 6 times, just enough to incorporate. You want the raspberries to stay slightly chunky for texture.
Step 5
Make the rolling coat: on a small plate mix the remaining raspberries and 2 tbsp shredded coconut
Step 6
Scoop out 1 1/2 tablespoons of mixture and roll firmly between your balls into a ball and roll in coconut and raspberry pieces.
Step 7
Chill for at least 30 minutes
