Instructions
Step 1
Bring 2.5 litres of salted water to a boil in a large pot.
Step 2
When boiling, add gnocchi and cook for 2-3 minutes or until they float.
Step 3
Drain gnocchi in a fine mesh sieve.
Step 4
Wash and chop basil leaves, trim and slice shallots, and chop sun-dried tomatoes.
Step 5
Heat 2 tbsp of olive oil in a large saucepan over medium-high heat.
Step 6
Add shallots and cook for 2-3 minutes until beginning to color.
Step 7
Stir in sun-dried tomatoes and minced garlic, cook for 1 minute.
Step 8
Add white cooking wine and let it evaporate mostly.
Step 9
Mix flour into 1/2 cup of water until smooth, and stir into the saucepan.
Step 10
Add whipping cream, bring to a simmer, stir in basil, and season with salt and pepper.
Step 11
Reduce heat to medium-low and cook sauce for 3-5 minutes until creamy.
Step 12
Add drained gnocchi to sauce, mix, and serve topped with grated Parmesan and walnuts.
Step 13
Serve with a side of spring mix seasoned with sherry vinegar and maple syrup.
