Step 1

In a bowl, add: 250g active starter 725g warm water Mix
Add:
25g salt
1000g unbleached bread flour
Mix
Cover and leave on the counter for 1 hour
(1) After 1 hour: stretch and fold 10 times, cover
(2) After 30 minutes: stretch and fold 4 times, cover
(3) After 30 minutes: stretch and fold 4 times, cover
(4) After 30 minutes: stretch and fold 4 times, cover. Leave for 2 hours.
After 2 hours, flour your surface, take it out of the bowl and divide the dough into 2. Shape it and leave on the counter for 20 minutes
After 20 minutes, flour the surface.
Step 2
Heat oven to 450. Score and cover for 30 in Dutch oven. Then 15 - 20 without cover.
