Instructions

Step 1
Preheat your oven to 375°F (190°C).

Crack the eggs into a large mixing bowl.
Step 3
Add the egg whites, cottage cheese, mixed fajita onions, diced bell peppers, salt, and pepper to the bowl.

Slice the chicken sausage links into bite-sized pieces and add them to the bowl.

Mix all the ingredients well until they are evenly combined.

Spray a large baking dish with non-stick cooking spray.

Pour the egg mixture into the prepared baking dish.

Sprinkle the fat-free mozzarella cheese evenly over the top.

Bake in the preheated oven for about 30 minutes or until the eggs are fully set and the top is golden brown.
