Step 1
Add beef and oil to skillet. Brown
Push beef to one side
Sauté onion and garlic
Add zucchini, bell pepper and tomatoes
Cook 5 to 7 mins
Add salt, pepper, cumin, paprika, red pepper flakes, oregano
Stir to coat everything with the seasonings.
Cook until all veggies are tender firm
Squeeze in lemon juice
Sprinkle in crumbled feta and cilantro
Serve with rice, quinoa or pita bread
