Zucchini Fry Cakes
These cheesy zucchini patties are easy to make and an excellent way to use up that abundance of summer zucchini from the garden.

Instructions
Step 1
In a large bowl, whisk eggs until well blended. Add lemon juice, mayonnaise, cheeses, flour, and onion. Stir in zucchini until well blended. Season to taste with salt and pepper.
Step 2
In a 12" frying pan, heat 1 Tbs butter and 1 Tbs olive oil over medium-high heat, until butter melts. Drop 1 Tbs at a time into the pan and spread out to form a 3" pancake. Repeat for 3-4 cakes.
Step 3
Cook until golden brown on pan side being sure to tease oil around outside edge of each cake, then flip and repeat for each cake.
Step 4
Serve hot with sour cream or your favorite sauce and add chives if desired. Note: cook only what can be eaten at a single setting because neither cakes or batter stores well.
