8 ozlinguine pasta
2 Tbspvegan butter
16 ozmushrooms
sliced
2 tspbalsamic vinegar
2 Tbspolive oil
6 clovesgarlic
minced
1 Tbspwhite miso paste
0.4 gramsSalt
to taste
0.1 gramsBlack pepper
to taste
1 Tbspsoy sauce
2 Tbspnutritional yeast
½ cupsoy cream
or other plant-based cream

½ cuppasta water
reserved
Instructions
Step 1
Step 1 Cook the pasta according to package instructions, then drain while reserving 1/2 cup pasta water.
Step 2
Step 2 In a skillet, melt vegan butter over medium-high heat and add mushrooms. Cook for about 10 minutes until browned, season with salt and pepper, then stir in balsamic vinegar and cook for 2–3 minutes until caramelized. Remove and set aside.

Step 3 In the same skillet, heat olive oil over medium-high heat. Add garlic and sauté for 1–2 minutes. Stir in miso paste and let it melt into the garlic and oil.
Step 4
Step 4 Add soy cream, nutritional yeast, soy sauce, salt, and pepper, stirring until combined.
Step 5
Step 5 Add cooked pasta to the skillet, toss with sauce, and thin gradually with reserved pasta water until creamy.
Step 6
Step 6 In a separate pan, caramelize onions slowly in olive oil until golden and sweet, about 20 minutes.

Step 7 Serve pasta topped with caramelized onions, mushrooms, and pine nuts.
