Step 1

Bring a large pot of water to a boil with some salt.
Step 2

Add your pasta and cook until it is al-dente.

Remove the pasta from the pot.
Step 4
Reserve some pasta water for later.
Step 5

To remove the mentaiko (pollock roe) from its sac, gently slice the top layer bilaterally and open the sac.
Step 6

Use a spoon to gently scrape out the roe.
Step 7

In a bowl, combine the pollock roe, heavy cream, black pepper and soy sauce.

Mix well.
Step 9

Add the hot pasta along with butter.

Step 10

Add pasta water.

Step 11

Toss until well combined. This is a no cook sauce so you need to make sure your pasta and pasta water are hot to melt the butter! The pasta will absorb some of the liquid creating a thick luscious sauce. If the sauce is too thick, add more pasta water.
Step 12

Garnish with green onions and enjoy!
