Miso udon carbonara
I made Miso Udon Carbonara using my leftover Thanksgiving ham. It’s a great substitute for bacon. You can also use your pasta or noodle of choice but I love the chewiness from the udon noodles. A perfect way to use your leftovers and it’s delicious!!

Step 1
Cook your ham until the fat has rendered and it is slightly crispy. Add garlic and cook for 1 minute, then turn off the heat and remove the ham. Boil the udon noodles for 2 minutes.
Step 2
To a bowl, add the eggs, miso, Parmesan cheese, black pepper, heavy cream and mix to combine.
Step 3
Add cooked udon noodles to pan and pour over the sauce mixture. Add 2 tbsp of pasta water to the pan, depending on how saucy you like it. (I didn’t add it) Continue to stir until the sauce becomes glossy and creamy. Serve immediately. I like to add more black pepper, shichimi spice (pepper seasoning) and green onions.
